Have you ever wondered why some carrots taste like soap? Fresh produce give off harmless ethylene gas, some (like apples and bananas) more than others. Ethylene causes carrots to produce more terpenoids and, once they reach critical mass, gives them a stimulating, soapy taste that is especially noticeable when you eat it raw.
If your carrots have been sealed improperly or stored in a soft place with many other fruits and vegetables that produce ethylene, the soapy taste will reveal itself.
Terpenoids are highest when carrots are young, so carrots harvested early can be bitter. But baby carrots are actually made from mature carrots, so if you have baby carrots, storage may be the reason.

How to stop carrots from from tasting soapy
If you have baby carrots, as soon as you get back from the store, put them in the bag they came in and drain. Then place them in an airtight container or zip-top bag. Keeping them sealed will help the ethylene gas that falls around the fridge not to reach them more quickly, and it will help keep the carrots from dying.
One rule for large, normal, unpeeled carrots: store them in an airtight container. If the bag the carrots came in is loose or rotten, consider moving the carrot to a new, sturdy bag.
