Baby carrots are the delights of the plant world. They are small, crunchy and sweet: the perfect snack on the go. Of course, they are also a good friend of hummus.

 Although baby carrots don’t last more than a week before eating them out of the bag, with proper storage they can last much longer. 

 What are baby carrots?

 Contrary to popular belief, not all baby carrots are cut from large shredded carrots. They can also be cut into large carrots that are harvested before maturity.

 After harvest, baby carrots are mixed with water with a small amount of chlorine to help prevent food-borne diseases. This white, colored substance (commonly called “blush”) is a byproduct of baby carrots. This happens when carrots are left in the air for a long time without being used properly in a bag or  container.
 
Fortunately, this white film is pretty good. If you can’t mentally prepare them at this point, cook them! They are still good to eat and this white film will no longer be visible once the carrots are cooked.

Filtered tap water is often placed in baby carrot bags for hydration during transport and storage. You do not need to transfer this liquid to the bag you are storing your carrots in once the bag is opened. 

The best way to save your baby carrots

 Once you’ve opened your bag of baby carrots, it’s best to transfer them to a resealable bag or container. Do not pour the water that collects at the bottom of the carrot bag into your bag.

An airtight seal keeps the moisture in the carrots, preventing drying and keeping them fresh.

How to tell if baby carrots are rotten
 
A bad carrot has a bad taste, a slimy exterior, and sometimes can be rubbery or floppy. Once they reach this state, unfortunately they cannot be brought back. They are going to the compost bin!
