Oxtail is a cut of meat from the tail of a cow. It’s unique because, unlike other beef, oxtail has lots of bones and meat attached to it, giving it a rich, hearty flavor and a wonderfully tender texture when cooked slowly.

What does oxtail taste like? 

Oxtail has a rich, deep and rich taste of beef, with a flavor that is sweet and savory. The magic happens when you cook it low and fast, which makes the meat so tender, it almost melts in your mouth.

Ingredients: 

  •  2-3 pounds oxtails, seasoned with salt and pepper

  •  2 tablespoons vegetable oil

  • 1 onion, chopped 

  • 3 cloves garlic, minced

  •  2 carrots, chopped
    – 2 tablespoons tomato paste 

  • 2 cups beef broth

  • 1 cup red wine

  •   1 bay leaf 

  • 1 teaspoon dried thyme

 Instructions: 

  • In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Sear the seasoned oxtails until browned on all sides. Remove and set aside.

  •   In the same pot, add chopped onions, garlic, and carrots. Sauté until the vegetables are softened.

  •   Stir in tomato paste and cook for a couple of minutes to remove the raw taste.

  •   Pour in red wine, scraping the bottom of the pot to deglaze and pick up any flavorful bits.

  •   Add the seared oxtails back to the pot. Pour in beef broth, and add the bay leaf and dried thyme. Season with salt and pepper to taste. 

  •   Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for 2-3 hours or until the oxtails are tender and the flavors have melded.

  • Adjust seasoning if needed and serve the smothered oxtails over rice, mashed potatoes, or your preferred side.
