PEPPERED COW TAIL SAUCE RECIPES

2 pounds cow tail, cut into pieces

2 onions, chopped

3 tomatoes, chopped

3 bell peppers (red, green, or yellow), chopped

3 Scotch bonnet peppers (adjust according to your spice preference)

2 tablespoons tomato paste

2 tablespoons vegetable oil

1 teaspoon thyme

1 teaspoon curry powder

Salt and black pepper to taste

Rinse the cow tail pieces under cold water and pat them dry with paper towels.

Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté until they become soft and translucent.

Add the cow tail pieces to the pot and brown them on all sides, stirring occasionally to ensure even cooking.

Once the cow tail is browned, add the chopped tomatoes, bell peppers, and Scotch bonnet peppers to the pot. Stir well to combine.

Stir in the tomato paste, thyme, curry powder, salt, and black pepper. Mix everything together until the cow tail pieces are well coated with the spices.

Reduce the heat to low, cover the pot, and let the sauce simmer for about 1.5 to 2 hours, or until the cow tail is tender and the flavors have melded together, stirring occasionally.
