 Ingredients:

  •   2 pounds cow tail, cut into pieces 

  • 2 onions, chopped

  • 3 tomatoes, chopped

  •   3 bell peppers (red, green, or yellow), chopped 

  • 3 Scotch bonnet peppers (adjust according to your spice preference) 

  • 2 tablespoons tomato paste 

  • 2 tablespoons vegetable oil 

  • 1 teaspoon thyme 

  • 1 teaspoon curry powder

  • Salt and black pepper to taste

  •  Chopped fresh cilantro or parsley for garnish (optional)

  •   Rinse the cow tail pieces under cold water and pat them dry with paper towels.

  • Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté until they become soft and translucent. 

  •  Add the cow tail pieces to the pot and brown them on all sides, stirring occasionally to ensure even cooking. 

  • Once the cow tail is browned, add the chopped tomatoes, bell peppers, and Scotch bonnet peppers to the pot. Stir well to combine.

  •   Stir in the tomato paste, thyme, curry powder, salt, and black pepper. Mix everything together until the cow tail pieces are well coated with the spices.

  •  Reduce the heat to low, cover the pot, and let the sauce simmer for about 1.5 to 2 hours, or until the cow tail is tender and the flavors have melded together, stirring occasionally. 

  • Taste the sauce and adjust the seasoning if needed.

  • Once the cow tail is tender and the sauce has thickened to your liking, remove the pot from the heat.

  • Serve the peppered cow tail sauce hot, garnished with chopped fresh cilantro or parsley if desired.

Enjoy it with rice, plantains, or your favorite side dishes.
