What is Pinakbet?
Pinakbet Tagalog is edible because it’s delicious! A delicious combination of local vegetables, pork belly, and shrimp paste, this delicious Filipino stew is perfect as a main dish or as an accompaniment to grilled fish or grilled meat.
As the dish became popular in the surrounding areas, different versions took root. Pinakbet Tagalog, as the Southern Ilocos (Manila and adjacent areas) version is called uses shrimp paste for flavor.

Ingredients:

1 cup squash, sliced

1 cup eggplant, sliced

1 cup okra, trimmed

1 cup string beans, cut into 2-inch lengths

1 medium-sized bitter gourd (ampalaya), sliced

1 medium-sized tomato, chopped
-
1 medium-sized onion, sliced
-
4 cloves garlic, minced
-
1/4 cup shrimp paste (bagoong)

1/2 cup pork belly, sliced (optional)

2 tablespoons cooking oil

Instructions:

In a wide pan, heat oil and sauté garlic, onion, and tomato.

Add pork belly slices and cook until browned.

Stir in shrimp paste and continue to cook for a few minutes.

Add squash, eggplant, okra, string beans, and bitter gourd. Mix well.

Pour in about a cup of water, cover, and let it simmer until vegetables are tender.

Season with salt and pepper to taste.

Serve hot with steamed rice.
