Nigerian Chicken Recipe: Chicken Suya
Chicken Suya is another way to enjoy Nigerian Suya spices added to meat.
It is prepared in the same way as the classic Nigerian Suya, the only difference is the meat used. We use beef fillets for Suya Nigeria and we use chicken breast fillets for this. You can also use chicken laps, but to add more suya, you need chicken fillets.
There is also Ram Suya, Lamb Suya, you can use your favorite meat. Once you get the suya pepper properly prepared, the final product will taste just like suya.
Ingredients You Need for Chicken Suya
- Chicken breast
- Suya spice
- Suya pepper
- Groundnut or peanut oil
- Salt

Making the Chicken Suya

- Prepare suya pepper if you don’t have any.
- Cut the chicken breast into fillets. The butchers where I live do it for me. If you don’t have a market nearby, do your best with a sharp knife. Watch the video for more idea.
- Cut the fillets into manageable suya size. Attach the chicken fillets to the suya stick as shown in the video below. putting the beef on stick is optional, so you can skip this step.
- Put a little vegetable oil in a large bowl, add a little salt and stir.
- Using a cooking brush, rub the vegetable oil into the fillets chicken. This is what helps the suya pepper stick to the chicken, so make sure you rub the oil on every part of the chicken tender.

- Spread the suya spice in a wide plate and cover the chicken breast with the pepper so that all parts of the chicken are covered with the suya spice.
- Place the spiced chicken fillets on a flat plate and cover with plastic wrap or aluminum foil.
- Place in the refrigerator to marinate for at least 1 hour. I even leave this on overnight depending on when I need it.
- When you are ready to grill, put your oven on the grill at 200°C (400F) to heat up.
- Place the chicken in the oven, making sure the ears are on top of the pan.
- Grill/Roast in a preheated oven for about 30 minutes making sure that both sides of the chicken suya are cooked well. So you grind the upper part for about 10 minutes, turn them over and heat the lower part for 10 minutes and turn them until they are done.
- At the end, you can apply more vegetable oil to the chicken suya fillet, so that they are moist instead of dry.
- That’s it!
Serve with slices of onion, tomato, cabbage and cucumber. Then a cold drink. Sweet!
