Call it Bobozi, Abacha Mmiri, Air Air or for ajebutters, wet cassava chips. This is the food Nigerians want to eat on a sunny day. 
The nickname “air” comes from the way it cools the body when you eat it on a hot day.

Ingredient

  • cassava tubers (Yuca): as much as you can finish

It goes well with:

  •  Coconut
  •  Roasted peanuts/peanuts
  •  Palm kernel

Direction:

  •  Cut and wash cassava tubers.
  • Cut them into cylindrical pieces 2 inches long or short depending on how long you want your Bobozee. 
  • Put the pieces in a bowl, pour cold water to cover the contents and cook until done.
  •  Remove them from the water and spread them out to cool completely.
  • Cut them into slices, slices should be about 3mm thick. 
  • Soak overnight in plenty of cold water.
  •  The next day, rinse several times with plenty of cold water, gently rubbing the strips with your open palm. Wash until they are no longer slimy and the sour taste is gone. Change the water often as you wash them.

 Note: Some types of cassava are not slimy, for those; rinse until the sweet and sour taste disappears.
 
Eat with coconut, palm kernel or roasted peanuts (peanuts).

 

 

Nigerian Okpa, Okpa di Oku, Okpa Wawa (Nigeria recipe)

Okpa is so good that many people have tried it many times, but they cannot recreate its unique taste in their own home.
But the secret to making the best Okpa is to use as few ingredients as possible, because Okpa beans (Bambara Groundnut or Bambara Beans) have a delicious flavour. This flavor is destroyed when people start adding more spices to food.
Other names for Okpa are Igba and Ntucha.

 Ingredients for Okpa
 
For the 12 medium wraps of Okpa, you’ll need:
 

  • 3 cigar cups| 450g 1 lb of Okpa flour
  •  15 tablespoons of red palm oil
  • 4 small stock cube (Maggi, Knorr etc.)
  • Salt (to taste)
  • Habanero pepper (to taste)
  •  1.2 liters of hot water / heat

In addition to the wraper below, you’ll also need some strong food safe string/ twine to tie the wraper together. I advise using a plate as a last resort because it is important to completely submerge the Okpa in the hot water for any appearance immediately after being done. This cannot be achieved through bowls.

Notes on the ingredients

 

  • Okpa beans are known as Bambara groundnut or simply Bambara nut. In some parts of the world it is called Jugo Beans. There are different types of Okpa. It comes in small pods that you open to release the seeds. The seeds are hard and only special heavy duty industrial grinders can easily grind them into powder. So this is not a job for your dry mill kitchen. 
  • If you live outside Nigeria, you can buy Okpa flour on Amazon. You can also ask your family or friends to send you Okpa flour from Nigeria. The custom of most countri will allow because it is dry powder.
  • You need enough oil to give the okpa a bright yellow color and to improve its taste.
  • Okpa does not require a lot of cooking, so the ingredients listed above are all you need. Onions and crawfish spoil the sweet flavor of the coconut meat.
  •  Okpa’s mixture may look like water but 1.2 liters of water is the amount of water you need to get the perfect texture of Okpa. Adding less water, you will get a stone.

 Before cooking Okpa
 

  • Prepare the banana leaves by washing them thoroughly in salted water. If you have banana / plantain in your garden, you should dry the leaf by drying it on low heat, then let it dry before you use it. You should not wrap Okpa with fresh banana leaves.
  • Crush thestock/bouilion cubes.
  • Cut the habanero pepper into small pieces.
  • Prepare 1.2 liters of lukewarm water. 

Cooking Directions

  •  Mix the Okpa flour in a large bowl. Add salt to the crushed stock cubes. Mix well.
  • Add oil. Mix the palm oil and flour well until the palm is well incorporated into the flour. You will have a nice yellow color when done. 
  • Pour enough water into a large bowl and bring to a boil over high heat.
  •  Start adding warm water to Okpa flour and mix until there are no lumps. 
  •  Add the sliced ​​habanero pepper. Check the salt and add more if needed and it’s ready to go in the package! 
  • Now, the water in the pot should be boiling. Otherwise, wait for it to cook and cover with a few plastic bags before proceeding to the next step. Packaging and plastic bags serve as the basis for Okpa’s packaging.
  • Wrap the as shown in the video above
  •  Tie the other end with a string and place the wrapped bag in a pot of boiling water. It is important that Okpa is completely immersed in hot water.
  • Repeat the above steps for the remaining mixture. Be sure to mix the mixture well, put it in a package, tie it with a string and put it in a pot of boiling water before pouring the next one.
  •  When done, cover the wrappers with paper or a plastic bag. Cover the pot and start cooking on medium to high heat.
  •  Cook for at least an hour before checking. Okpa is cooked when it is hard.

 
How to wrap Okpa with banana leaves


  Method one:

  • Raise the open end like a cloth until you have enough of a crease to prevent leakage.
  •  Gather one end and tie it to the twine tightly.
  • Mix and pour the mixture into the bag.
  • Wrap the other end and it is ready to go into the pot of boiling water.

Method two

 (if you don’t have banana leaves)
 You can put the Okpa mixture in a plastic bag, tie it up and put it in a pot of boiling water, but this is how you get the best quality okpa when using a plastic bag.

  • Double the plastic bag and tie the ends with string.
  • Mix and pour the mixture into the bag.

  • Stir and scoop the mixture into a bag
  •  Wrap it halfway into the bag.
  •  Mix and pour the mixture into the second half of the bag. 
  • Tie it again and it is ready to go into the pot of boiling water.
