Got an extra ear or two of corn? The best way to freeze it is to blanch it first. 

Follow the steps below:

  • Shuck the corn and remove its silks. 
  • Bring a pot of water to a boil.
  • Add the corn to the boiling water, make sure there is enough water. (You may need to blanch the corn in batches.)
  • Cook for about 3 minutes, before transferring the corn to an ice bath. 
  • Once the corn has cooled down, pat it dry with a towel and space it out on a baking sheet.
  • Flash freeze the corn for about two hours.
  • Once the corn is frozen, place it in an airtight container or food storage container and return it to the freezer.

How to Freeze Corn Kernels

Follow the steps below and freeze just the kernels instead!

  •  Shuck the corn and remove its silks.

Frozen corn, both in shell and kernel form, will keep intact for up to a year. However, it’s best to enjoy your frozen corn within six months, when it will be at its best.

 How to defrost frozen corn
 
For best results, thaw frozen corn in the refrigerator overnight. Otherwise, you can cook corn directly from frozen by adding it to a pot of boiling water.
